Description

Hearty One-Pot Egg Roll Soup captures the comforting flavors of a classic egg roll in a delicious and easy-to-make soup. It's a busy family favorite that's packed with nutrition and requires minimal cleanup.


Ingredients

1 tablespoon Olive Oil
1 pound Lean Ground Chicke
1 Yellow Onion, finely chopped
3 cloves Garlic, minced
1 tablespoon Fresh Ginger, grated
4 cups Chicken or Vegetable Broth
1/4 cup Soy Sauce or Tamari
2 tablespoons Rice Vinegar
1 tablespoon Sesame Oil
1 tablespoon Honey or Maple Syrup
1 teaspoon Sriracha (optional)
1 (14-ounce) bag Coleslaw Mix
2 Green Onions, sliced for garnish
1 tablespoon Sesame Seeds for garnish
Crispy Wonton Strips for serving


Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the ground chicken and cook until browned. Drain excess grease
  2. Push the browned meat to one side. Add the chopped onion to the other side and cook until translucent. Stir in garlic and ginger until fragrant
  3. Combine the meat, onion, garlic, and ginger. Pour in the broth, soy sauce, rice vinegar, sesame oil, honey (or maple syrup), and Sriracha. Bring to a gentle simmer
  4. Add the coleslaw mix to the pot and stir gently until mostly submerged in liquid
  5. Continue to simmer for 5-7 minutes until cabbage is tender-crisp. Adjust seasonings to taste
  6. Ladle into bowls and garnish with green onions and sesame seeds. Serve with crispy wonton strips

Prevent overcooking the cabbage for better texture.
