Ingredients
1 tablespoon Olive Oil
1 pound Lean Ground Chicke
1 Yellow Onion, finely chopped
3 cloves Garlic, minced
1 tablespoon Fresh Ginger, grated
4 cups Chicken or Vegetable Broth
1/4 cup Soy Sauce or Tamari
2 tablespoons Rice Vinegar
1 tablespoon Sesame Oil
1 tablespoon Honey or Maple Syrup
1 teaspoon Sriracha (optional)
1 (14-ounce) bag Coleslaw Mix
2 Green Onions, sliced for garnish
1 tablespoon Sesame Seeds for garnish
Crispy Wonton Strips for serving
Instructions
- Heat the olive oil in a large pot over medium-high heat. Add the ground chicken and cook until browned. Drain excess grease
- Push the browned meat to one side. Add the chopped onion to the other side and cook until translucent. Stir in garlic and ginger until fragrant
- Combine the meat, onion, garlic, and ginger. Pour in the broth, soy sauce, rice vinegar, sesame oil, honey (or maple syrup), and Sriracha. Bring to a gentle simmer
- Add the coleslaw mix to the pot and stir gently until mostly submerged in liquid
- Continue to simmer for 5-7 minutes until cabbage is tender-crisp. Adjust seasonings to taste
- Ladle into bowls and garnish with green onions and sesame seeds. Serve with crispy wonton strips
