Ingredients

Scale

For the Tart Crust:

  • 1 ½ cups (180g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder
  • ½ cup (100g) granulated sugar
  • ¼ teaspoon salt
  • 1 stick (113g) unsalted butter, very cold and cut into small cubes
  • 46 tablespoons ice water

For the Chocolate Ganache Filling:

  • 1 ½ cups (360ml) heavy cream
  • 12 ounces (340g) good quality dark chocolate (60-70% cocoa), finely chopped or in chips
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons pure maple syrup or corn syrup (optional, for shine and texture)
  • 1 teaspoon pure vanilla extract
  • Pinch of sea salt

For Garnish (Optional):

  • Whipped cream
  • Fresh berries (raspberries, strawberries)
  • Dusting of cocoa powder or powdered sugar
  • Chocolate shavings

Instructions

  1. Prepare the tart crust by mixing the dry ingredients, cutting in the butter, and adding ice water until dough forms. Chill the dough for 30 minutes
  2. Roll out the dough, transfer it to a tart pan, and blind bake for 20-25 minutes. Let it cool completely
  3. Heat the heavy cream and maple syrup until simmering, pour over chopped chocolate and butter, and whisk until smooth. Stir in vanilla and salt
  4. Pour the ganache into the cooled tart crust, chill for at least 4-6 hours until set. Garnish before serving
