Description
Delicious and homemade blueberry pop tarts made with fresh blueberries and a flaky crust.
Ingredients
2 ½ cups All-purpose flour
1 teaspoon Granulated sugar
½ teaspoon Salt
1 cup Unsalted butter
½ cup Ice water
1 ½ cups Fresh or frozen blueberries
¼ cup Granulated sugar
1 tablespoon Lemon juice
1 tablespoon Cornstarch
1 cup Powdered sugar
2–3 tablespoons Milk
½ teaspoon Vanilla extract
Instructions
- Prepare the pastry dough by whisking together flour, granulated sugar, and salt. Cut in cold butter until it resembles coarse crumbs. Gradually add ice water and mix until it comes together. Refrigerate for at least 30 minutes
- Make the blueberry filling by combining blueberries, granulated sugar, lemon juice, and cornstarch in a saucepan. Cook over medium heat until thickened. Let cool completely
- Roll out the dough into a rectangle and cut into smaller rectangles. Repeat with the second dough disc
- Assemble the pop tarts by placing filling in the center of half the dough rectangles and sealing with the other rectangles
- Bake at 375°F for 18-22 minutes until golden brow
- Cool and glaze with a mixture of powdered sugar, milk, and vanilla
Notes
For a dairy-free version, substitute butter with a plant-based alternative.
You can use different fruits for filling, adjusting sugar and cornstarch as needed.
