Description

2 tablespoons Olive Oil
1/2 teaspoon Sea Salt
1/4 teaspoon Black Pepper
1/2 cup Crumbled Feta Cheese
2 tablespoons Pure Honey
2 tablespoons Fresh Parsley
Pinch of Chili Flakes


Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper
  2. Wash the sweet potatoes thoroughly and slice them into 1/4-inch thick rounds
  3. In a large bowl, toss the sweet potato rounds with olive oil, sea salt, and black pepper
  4. Arrange the seasoned sweet potato rounds in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway through
  5. Sprinkle crumbled feta cheese over the roasted sweet potato rounds and drizzle with honey
  6. Optional: Broil on low for 2-4 minutes until feta is warm and honey is bubbly
  7. Garnish with fresh parsley and serve immediately
