Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper
- Wash the sweet potatoes thoroughly and slice them into 1/4-inch thick rounds
- In a large bowl, toss the sweet potato rounds with olive oil, sea salt, and black pepper
- Arrange the seasoned sweet potato rounds in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway through
- Sprinkle crumbled feta cheese over the roasted sweet potato rounds and drizzle with honey
- Optional: Broil on low for 2-4 minutes until feta is warm and honey is bubbly
