Ingredients

1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
2 tablespoons neutral oil
1/2 cup honey
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon fresh ginger, grated
4 cloves garlic, minced
1 tablespoon cornstarch
2 tablespoons cold water
1 teaspoon sesame oil
Salt and freshly ground black pepper, to taste
Optional garnishes: sesame seeds, chopped green onions


Instructions

  1. Pat the chicken thigh pieces dry with paper towels and season with salt and black pepper
  2. In a medium bowl, whisk together the honey, low-sodium soy sauce, rice vinegar, grated fresh ginger, and minced garlic
  3. Heat the neutral oil in a large skillet over medium-high heat. Add the chicken pieces and sear for 3-4 minutes per side until golden brown. Remove from the skillet
  4. Reduce the heat to medium and pour the prepared sauce into the skillet. Bring to a gentle simmer. In a small bowl, whisk together the cornstarch and cold water until smooth, then add it to the simmering sauce and whisk until thickened
  5. Return the cooked chicken to the skillet and toss with the sauce until coated. Stir in sesame oil if using
  6. Serve immediately, garnished with sesame seeds and chopped green onions if desired

Notes

Marinate the chicken in half of the sauce for additional flavor.
