Ingredients
2 tablespoons Olive Oil
2 pounds Lean Ground Beef
1 large Yellow Onio
2 Carrots
2 Celery Stalks
4 cloves Garlic
1 teaspoon Dried Oregano
1/2 teaspoon Dried Thyme
Pinch Red Pepper Flakes
1 cup Dry Red Wine
28 ounces Crushed Tomatoes
6 ounces Tomato Paste
1 cup Whole Milk
1 cup Beef Broth
2 Bay Leaves
Salt
Black Pepper

Instructions
- Heat the olive oil in a large, heavy-bottomed pot over medium-high heat. Add the ground beef, breaking it up with a spoon, and cook until browned. Drain excess fat
- Add the finely diced onion, carrots, and celery to the pot. Sauté for about 8-10 minutes
- Stir in the minced garlic, dried oregano, dried thyme, and red pepper flakes. Cook until fragrant
- Pour in the red wine and simmer, scraping the bottom of the pot, until reduced by half
- Return the browned beef to the pot. Stir in crushed tomatoes, tomato paste, whole milk, beef broth, bay leaves, salt, and pepper
- Bring to a gentle simmer, cover with a small crack for steam, and simmer for 2-4 hours
- After simmering, remove bay leaves, taste, and adjust seasoning. If too thick, add a splash of broth
- Serve hot with your favorite pasta
