Ingredients
1 ½ cups (3 sticks) Unsalted Butter, softened
1 cup Granulated Sugar
1 ½ cups Packed Light Brown Sugar
2 Large Eggs
2 teaspoons Vanilla Extract
3 ½ cups All-Purpose Flour
1 teaspoon Baking Soda
½ teaspoon Salt
2 cups Semi-Sweet Chocolate Chips
2 quarts High-Quality Vanilla Ice Cream, slightly softened
Optional: Sprinkles, Chopped Nuts, or Melted Chocolate for decorating
Instructions
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
- Beat in the eggs one at a time, then stir in the vanilla extract
- In a separate bowl, whisk together the flour, baking soda, and salt, then gradually mix it into the wet ingredients
- Fold in the chocolate chips by hand
- Refrigerate the dough for at least 30 minutes
- Preheat your oven to 375°F (190°C) and prepare baking sheets
- Scoop the dough onto the sheets and bake for 9-11 minutes
- Cool the cookies on a wire rack
- Soften the ice cream at room temperature for 10-15 minutes
- Assemble the sandwiches by pairing cookies and adding a scoop of ice cream between them
- Freeze the assembled sandwiches for at least 2-3 hours
