These Jerk Chicken & Mango Slaw Bowls with Honey Lime Cream offer a burst of joyful Caribbean flavors, combining smoky, spicy jerk chicken with sweet and tangy mango slaw, all topped with a creamy honey lime dressing.
Ingredients
1.5 lbs Boneless Skinless Chicken Breasts or Thighs
2 tablespoons Olive Oil
2 tablespoons Jerk Seasoning Blend
1 teaspoon Smoked Paprika
½ teaspoon Garlic Powder
¼ teaspoon Black Pepper
Pinch of Cayenne Pepper (optional)
3 cups Shredded Green Cabbage
1 large Ripe Mango, peeled and diced
½ Red Bell Pepper, thinly sliced
¼ Red Onion, thinly sliced
¼ cup Chopped Fresh Cilantro
½ cup Plain Greek Yogurt
2 tablespoons Fresh Lime Juice
1 tablespoon Honey
1 clove Garlic, minced
½ teaspoon Salt
¼ teaspoon Black Pepper
Cooked Rice or Quinoa (optional)
Lime Wedges for garnish
Extra Fresh Cilantro for garnish
Instructions
- Pat the chicken dry and cut into 1-inch pieces. In a medium bowl, combine olive oil, jerk seasoning, smoked paprika, garlic powder, black pepper, and cayenne (if using). Add chicken, toss to coat, cover, and marinate for at least 30 mins
- In a small bowl, whisk together Greek yogurt, lime juice, honey, garlic, salt, and pepper for the Honey Lime Cream. Adjust seasonings and refrigerate
- In a large mixing bowl, combine cabbage, mango, bell pepper, onion, and cilantro for the slaw. Toss gently to combine
- Heat a skillet over medium-high heat. Cook marinated chicken for 3-5 minutes per side until cooked through. Remove and let rest
- Assemble the bowls: Start with rice/quinoa, add mango slaw, top with jerk chicken, and finish with honey lime cream. Garnish with cilantro and lime wedge
