1.5 pounds Boneless, Skinless Chicken Breasts
1 teaspoon Sea Salt
1/2 teaspoon Black Pepper
1/2 cup Grated Parmesan Cheese
1/4 cup Almond Flour
2 tablespoons Olive Oil
4 cloves Garlic, minced
1/2 cup Low Sodium Chicken Broth
1/2 cup Heavy Cream
1/4 cup Cream Cheese, softened
1 tablespoon Fresh Parsley, chopped


Instructions

  1. Pat the chicken cutlets dry thoroughly with paper towels. Season both sides with sea salt and black pepper
  2. In a shallow dish, combine grated Parmesan cheese and almond flour. Dredge each chicken cutlet in the mixture, pressing gently to ensure a good coating
  3. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 3-5 minutes per side until golden brown and cooked through. Remove the cooked chicken and set aside
  4. Reduce the heat to medium and sauté minced garlic in the same skillet until fragrant, about 30 seconds
  5. Pour in the chicken broth, scraping any browned bits from the bottom of the skillet. Bring to a gentle simmer
  6. Stir in heavy cream and softened cream cheese. Whisk continuously until the sauce is smooth. Let it simmer for 2-3 minutes to thicken slightly
  7. Return the chicken to the skillet, coating it with the creamy sauce. Garnish with fresh chopped parsley and extra Parmesan cheese before serving

Notes

For thickening the sauce, use xanthan gum or simmer longer to achieve the desired consistency.
