Layered Sweet Potato Lasagna is a comforting and delicious twist on traditional lasagna that combines sweet potatoes, ground turkey, and creamy cheeses. It's packed with nutrition and flavor, making it a family favorite.
Ingredients
3 large Sweet Potatoes (about 3 lbs), peeled and thinly sliced (1/8-inch thick rounds)
1 tablespoon Olive Oil
1 lb Ground Turkey
1 large Onion, finely chopped
3 cloves Garlic, minced
1 (28 ounce) can Crushed Tomatoes
1 (15 ounce) can Tomato Sauce
1 teaspoon Dried Oregano
1/2 teaspoon Dried Basil
1/4 teaspoon Red Pepper Flakes (optional)
Salt and freshly ground Black Pepper to taste
12 Lasagna Noodles, oven-ready
15 ounces Ricotta Cheese
1/2 cup Grated Parmesan Cheese, plus more for topping
1 large Egg
1/2 cup Fresh Parsley, chopped
10 ounces Fresh Spinach, roughly chopped
3 cups Shredded Mozzarella Cheese, divided
Instructions
- Preheat your oven to 375°F (190°C). Peel the sweet potatoes and slice them into 1/8-inch thick rounds
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground turkey and cook until browned. Drain excess fat. Add the onion and cook until softened. Stir in the garlic and cook until fragrant
- Pour in the crushed tomatoes and tomato sauce. Add oregano, basil, red pepper flakes (if using), salt, and pepper. Simmer for at least 20 minutes
- In a medium bowl, combine ricotta cheese, Parmesan, egg, and parsley. Mix well and season with salt and pepper
- If using fresh spinach, stir it into the warm meat sauce during the last 5 minutes of simmering. If using frozen spinach, thaw it and squeeze out excess water
- Spread about 1 cup of meat sauce on the bottom of a 9×13 inch baking dish. Arrange a layer of noodles over the sauce, then add a layer of sweet potato rounds, overlapping slightly
- Spread half of the ricotta mixture over the sweet potatoes and sprinkle with 1 cup of mozzarella cheese. Repeat layers, finishing with noodles covered by meat sauce and remaining mozzarella
- Cover tightly with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and sweet potatoes are tender
- Let rest for 10-15 minutes before slicing and serving
Notes
For a vegetarian version, substitute meat with lentils or additional vegetables.
Allowing the lasagna to rest helps set the layers for cleaner slices.
