Description

Layered Sweet Potato Lasagna is a comforting and delicious twist on traditional lasagna that combines sweet potatoes, ground turkey, and creamy cheeses. It's packed with nutrition and flavor, making it a family favorite.

3 large Sweet Potatoes (about 3 lbs), peeled and thinly sliced (1/8-inch thick rounds)
1 tablespoon Olive Oil
1 lb Ground Turkey
1 large Onion, finely chopped
3 cloves Garlic, minced
1 (28 ounce) can Crushed Tomatoes
1 (15 ounce) can Tomato Sauce
1 teaspoon Dried Oregano
1/2 teaspoon Dried Basil
1/4 teaspoon Red Pepper Flakes (optional)
Salt and freshly ground Black Pepper to taste
12 Lasagna Noodles, oven-ready
15 ounces Ricotta Cheese
1/2 cup Grated Parmesan Cheese, plus more for topping
1 large Egg
1/2 cup Fresh Parsley, chopped
10 ounces Fresh Spinach, roughly chopped
3 cups Shredded Mozzarella Cheese, divided


Instructions

  1. Preheat your oven to 375°F (190°C). Peel the sweet potatoes and slice them into 1/8-inch thick rounds
  2. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground turkey and cook until browned. Drain excess fat. Add the onion and cook until softened. Stir in the garlic and cook until fragrant
  3. Pour in the crushed tomatoes and tomato sauce. Add oregano, basil, red pepper flakes (if using), salt, and pepper. Simmer for at least 20 minutes
  4. In a medium bowl, combine ricotta cheese, Parmesan, egg, and parsley. Mix well and season with salt and pepper
  5. If using fresh spinach, stir it into the warm meat sauce during the last 5 minutes of simmering. If using frozen spinach, thaw it and squeeze out excess water
  6. Spread about 1 cup of meat sauce on the bottom of a 9×13 inch baking dish. Arrange a layer of noodles over the sauce, then add a layer of sweet potato rounds, overlapping slightly
  7. Spread half of the ricotta mixture over the sweet potatoes and sprinkle with 1 cup of mozzarella cheese. Repeat layers, finishing with noodles covered by meat sauce and remaining mozzarella
  8. Cover tightly with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and sweet potatoes are tender
  9. Let rest for 10-15 minutes before slicing and serving

Notes

For a vegetarian version, substitute meat with lentils or additional vegetables.

Allowing the lasagna to rest helps set the layers for cleaner slices.
