Lemon Feta Orzo Shrimp is a quick and vibrant dish perfect for busy weeknights. The combination of succulent shrimp, zesty lemon, creamy feta, and tender orzo creates a harmonious and satisfying meal.
Ingredients
1 tablespoon Olive Oil
1 pound Large Shrimp, peeled and deveined
1 teaspoon Dried Oregano
1/2 teaspoon Red Pepper Flakes
Salt and Freshly Ground Black Pepper, to taste
3 cloves Garlic, minced
1 cup Orzo Pasta
3 cups Vegetable Broth
1/2 cup Fresh Lemon Juice
Zest of 1 Lemo
5 ounces Fresh Baby Spinach
1 cup Cherry Tomatoes, halved
4 ounces Feta Cheese, crumbled
1/4 cup Fresh Dill, chopped
Instructions
- Pat shrimp dry and season with olive oil, oregano, red pepper flakes, salt, and pepper
- Sauté shrimp in a skillet until pink and opaque, remove and set aside
- Sauté garlic in the skillet until fragrant
- Add orzo to the skillet and toast lightly
- Pour in broth and lemon juice, simmer until orzo is al dente
- Stir in spinach and tomatoes until wilted
- Return shrimp to skillet, add lemon zest and half feta, toss gently
- Serve with remaining feta and garnish with dill
Notes
Use fresh lemons for the best flavor.
Shrimp should not be overcooked for best texture.
