Description

Lemon Feta Orzo Shrimp is a quick and vibrant dish perfect for busy weeknights. The combination of succulent shrimp, zesty lemon, creamy feta, and tender orzo creates a harmonious and satisfying meal.


Ingredients

1 tablespoon Olive Oil
1 pound Large Shrimp, peeled and deveined
1 teaspoon Dried Oregano
1/2 teaspoon Red Pepper Flakes
Salt and Freshly Ground Black Pepper, to taste
3 cloves Garlic, minced
1 cup Orzo Pasta
3 cups Vegetable Broth
1/2 cup Fresh Lemon Juice
Zest of 1 Lemo
5 ounces Fresh Baby Spinach
1 cup Cherry Tomatoes, halved
4 ounces Feta Cheese, crumbled
1/4 cup Fresh Dill, chopped


Instructions

  1. Pat shrimp dry and season with olive oil, oregano, red pepper flakes, salt, and pepper
  2. Sauté shrimp in a skillet until pink and opaque, remove and set aside
  3. Sauté garlic in the skillet until fragrant
  4. Add orzo to the skillet and toast lightly
  5. Pour in broth and lemon juice, simmer until orzo is al dente
  6. Stir in spinach and tomatoes until wilted
  7. Return shrimp to skillet, add lemon zest and half feta, toss gently
  8. Serve with remaining feta and garnish with dill

Notes

Use fresh lemons for the best flavor.

Shrimp should not be overcooked for best texture.
