1 ½ pounds Boneless, Skinless Chicken Thighs, trimmed

1 teaspoon Onion Powder
½ teaspoon Dried Oregano
1 pound Fresh Green Beans, trimmed
4 cloves Garlic, minced
¼ cup Chicken Broth
¼ cup Unsalted Butter
2 tablespoons Fresh Lemon Juice (from 1 small lemon)
1 tablespoon Fresh Lemon Zest (from 1 small lemon)
2 tablespoons Fresh Parsley, chopped (for garnish, optional)


Instructions

  1. Pat the chicken thighs dry with paper towels and season with salt, black pepper, onion powder, and dried oregano
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs for 4-6 minutes per side until golden brown, then remove from skillet
  3. In the same skillet, add green beans and sauté for 5-7 minutes until tender-crisp
  4. Push green beans aside, add garlic to the cleared space, and cook for 30 seconds. Then pour in chicken broth, scraping up browned bits
  5. Add butter, lemon juice, and lemon zest. Stir until butter melts and sauce is combined. Taste and adjust seasoning
  6. Return chicken to the skillet, spoon sauce over, cover, and simmer for 2-3 minutes
  7. Garnish with parsley and serve immediately

Notes

Experiment with different vegetables or seasonings for variety.
