Description

These Lemon Truffles are delightful no-bake treats that burst with zesty lemon flavor, perfect for any occasion.


Ingredients

1 (8-ounce) package Cream Cheese, full-fat, softened
1 cup Powdered Sugar
Zest of 2 large Lemons (about 2 tablespoons)
2 tablespoons Fresh Lemon Juice
1 teaspoon Vanilla Extract
1/4 cup Unsalted Butter, softened
1/2 cup Desiccated Coconut, optional, for coating


Instructions

  1. In a large mixing bowl, combine the softened cream cheese and softened butter. Use an electric mixer on medium speed to beat them until light and fluffy
  2. Gradually add the powdered sugar, mixing on low speed, then increase to medium-high and beat for another 1-2 minutes. Add lemon zest, lemon juice, and vanilla extract, and beat until just combined
  3. Cover the bowl with plastic wrap and refrigerate for at least 2-3 hours or overnight
  4. Once chilled, scoop the mixture using a small cookie scoop and roll into 1-inch balls
  5. Roll each truffle in your chosen coating until evenly covered and place on a parchment-lined baking sheet
  6. Chill for another 30 minutes to 1 hour before serving
