Ingredients

1 (8-ounce) package Cream Cheese, full-fat, softened
1 cup Powdered Sugar
Zest of 2 large Lemons (about 2 tablespoons)
2 tablespoons Fresh Lemon Juice
1 teaspoon Vanilla Extract
1/4 cup Unsalted Butter, softened
1/2 cup Desiccated Coconut, optional, for coating
Instructions
- In a large mixing bowl, combine the softened cream cheese and softened butter. Use an electric mixer on medium speed to beat them until light and fluffy
- Gradually add the powdered sugar, mixing on low speed, then increase to medium-high and beat for another 1-2 minutes. Add lemon zest, lemon juice, and vanilla extract, and beat until just combined
- Cover the bowl with plastic wrap and refrigerate for at least 2-3 hours or overnight
- Once chilled, scoop the mixture using a small cookie scoop and roll into 1-inch balls
- Roll each truffle in your chosen coating until evenly covered and place on a parchment-lined baking sheet
- Chill for another 30 minutes to 1 hour before serving
