Description

This Mexican Chicken Casserole combines tender chicken, savory beans, sweet corn, and zesty tomato sauce, topped with melted cheese and crunchy tortilla chips. It's easy to prepare and perfect for busy weeknights, offering wholesome ingredients and customizable options.

2 tablespoons Olive Oil
1 medium Yellow Onion, chopped
2 cloves Garlic, minced
1 Red Bell Pepper, diced
1 Green Bell Pepper, diced
2 cups Cooked Chicken, shredded
1 (15-ounce) can Black Beans, rinsed and drained
1 (15-ounce) can Whole Kernel Corn, drained
1 (14.5-ounce) can Diced Tomatoes, undrained
1 (10-ounce) can Mild Red Enchilada Sauce
1/2 cup Chicken Broth, low sodium
1 tablespoon Chili Powder
1 teaspoon Ground Cumi
1/2 teaspoon Smoked Paprika
1/2 teaspoon Dried Oregano
1/4 teaspoon Salt, or to taste
1/4 teaspoon Black Pepper, or to taste
2 cups Shredded Monterey Jack Cheese
1 cup Crushed Tortilla Chips
Fresh Cilantro, chopped, for garnish
Green Onions, sliced, for garnish


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish
  2. Heat olive oil in a skillet over medium heat, add chopped onion and cook for 5-7 minutes
  3. Stir in minced garlic and diced bell peppers, cooking for an additional 3-5 minutes until softened
  4. Add shredded chicken, black beans, corn, diced tomatoes, enchilada sauce, chicken broth, chili powder, cumin, smoked paprika, oregano, salt, and pepper to the skillet, stirring to combine and simmer for 5 minutes
  5. Pour the chicken and vegetable mixture into the prepared baking dish
  6. Sprinkle 1 1/2 cups shredded cheese over the mixture and top with crushed tortilla chips
  7. Bake for 20-25 minutes until bubbly and cheese is golden brow
  8. Let rest for 5-10 minutes, garnish with cilantro and green onions, then serve warm

Notes

For extra crunch, add tortilla chips in the last 10-15 minutes of baking.

Using rotisserie chicken saves time in preparation.
