Description

Moist Blueberry Zucchini Bread With Lemon Glaze is a delightful quick bread that combines the sweetness of blueberries and the moistness of grated zucchini with a bright lemon glaze. This recipe is perfect for using up garden zucchini and is sure to be a family favorite.

2 cups All-purpose flour
1 cup Granulated sugar
1 teaspoon Baking powder
1/2 teaspoon Baking soda
1 teaspoon Ground cinnamo
1/2 teaspoon Salt
2 Large eggs, at room temperature
1/2 cup Vegetable oil
1 teaspoon Vanilla extract
1 1/2 cups Grated zucchini, lightly packed
1 cup Fresh blueberries, rinsed and dried
1 tablespoon All-purpose flour, for tossing with blueberries
1 1/2 cups Powdered sugar
23 tablespoons Fresh lemon juice


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pa
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt
  3. In a separate medium bowl, whisk together the eggs, vegetable oil, and vanilla extract until smooth
  4. Pour the wet ingredients into the dry ingredients. Stir gently until just combined
  5. Fold in the grated zucchini. Toss the blueberries with 1 tablespoon of flour, then gently fold them into the batter
  6. Pour the batter into the prepared loaf pan and tap the pan to release air bubbles
  7. Bake for 50-65 minutes, or until a toothpick comes out clean. The top should be golden brow
  8. Cool in the pan for 10-15 minutes, then remove and let cool completely on a wire rack
  9. While cooling, prepare the lemon glaze by whisking together the powdered sugar and lemon juice until smooth
  10. Drizzle the glaze over the cooled loaf and let it set before slicing

Notes

For gluten-free option, use a 1:1 gluten-free baking blend.

Ensure to toss the blueberries in flour to prevent sinking.
