Ingredients
1/2 cup Unsalted Butter, softened
1/2 cup Creamy Peanut Butter
1/2 cup Granulated Sugar
1/4 cup Packed Light Brown Sugar
1 Large Egg
1 teaspoon Vanilla Extract
1 1/4 cups All-Purpose Flour
1 teaspoon Baking Soda
1/2 teaspoon Salt
1 cup Semi-Sweet Chocolate Chips
2 cups Chex Cereal (rice or corn)
2 cups Powdered Sugar (for coating)
Instructions
- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper
- In a large mixing bowl, combine the softened butter and creamy peanut butter and beat until light and fluffy
- Add granulated sugar and brown sugar to the butter mixture and beat until creamy
- Beat in the egg and then stir in the vanilla extract until smooth
- In a separate bowl, whisk together flour, baking soda, and salt
- Gradually add the dry ingredients to the wet ingredients and mix on low until combined
- Fold in chocolate chips and then fold in Chex cereal
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie
- Bake for 8-10 minutes or until edges are golden and centers are set
- Let cookies cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely
- Once cooled, coat cookies in powdered sugar until thoroughly coated
Notes
Allow cookies to cool completely before coating with powdered sugar for the best results.
Chill the dough for 15-30 minutes if it's too sticky to handle.
