Ingredients
1 package (14.3-ounce) Chocolate Sandwich Cookies
6 tablespoons Unsalted Butter, melted
2 packages (8-ounce) Cream Cheese, softened
3/4 cup Granulated Sugar
2 large Eggs
1 teaspoon Vanilla Extract
1 teaspoon Peppermint Extract
1/4 teaspoon Salt
2–3 drops Red Food Coloring (optional)
Crushed Peppermint Candies or Candy Canes (for garnish)
White Chocolate, melted (for garnish)
Extra Oreo Crumbs (for garnish)
Instructions
- Preheat your oven to 325°F (160°C) and line a 9×13 inch baking pan with parchment paper
- Crush the chocolate sandwich cookies into fine crumbs and mix with melted butter until moistened
- Press the crumb mixture evenly into the bottom of the prepared baking pan and bake for 8-10 minutes
- Let the crust cool slightly, then beat the cream cheese until smooth before gradually adding sugar and other filling ingredients
- Incorporate the eggs one at a time, mixing on low until just combined
- Pour the cheesecake filling evenly over the cooled crust and bake for 25-30 minutes until the edges are set
- Let the cheesecake cool completely before refrigerating for at least 4 hours before cutting into bites
