Description

These Peppermint Cheesecake Bites with Oreo Crust are a festive, creamy, and delightful treat perfect for the holiday season. With an easy-to-make Oreo crust and a luscious peppermint cheesecake filling, they are sure to impress your guests and loved ones.


Ingredients

1 package (14.3-ounce) Chocolate Sandwich Cookies
6 tablespoons Unsalted Butter, melted
2 packages (8-ounce) Cream Cheese, softened
3/4 cup Granulated Sugar
2 large Eggs
1 teaspoon Vanilla Extract
1 teaspoon Peppermint Extract
1/4 teaspoon Salt
23 drops Red Food Coloring (optional)
Crushed Peppermint Candies or Candy Canes (for garnish)
White Chocolate, melted (for garnish)
Extra Oreo Crumbs (for garnish)


Instructions

  1. Preheat your oven to 325°F (160°C) and line a 9×13 inch baking pan with parchment paper
  2. Crush the chocolate sandwich cookies into fine crumbs and mix with melted butter until moistened
  3. Press the crumb mixture evenly into the bottom of the prepared baking pan and bake for 8-10 minutes
  4. Let the crust cool slightly, then beat the cream cheese until smooth before gradually adding sugar and other filling ingredients
  5. Incorporate the eggs one at a time, mixing on low until just combined
  6. Pour the cheesecake filling evenly over the cooled crust and bake for 25-30 minutes until the edges are set
  7. Let the cheesecake cool completely before refrigerating for at least 4 hours before cutting into bites
