Description

Quick & Easy Homemade Butter Chicken is a delicious and creamy dish that can be made in under 30 minutes using simple ingredients. It’s packed with rich flavors and is a perfect weeknight meal.

For the Chicken Marinade:

  • 1.5 lbs (about 680g) boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/2 cup plain yogurt
  • 1 tbsp fresh lemon juice
  • 1 tbsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1/2 tsp salt

For the Creamy Tomato Sauce:

  • 2 tbsp unsalted butter
  • 1 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tsp ground coriander
  • 1 tsp sweet paprika
  • 1/2 tsp cayenne pepper (or more, to taste)
  • 1 (15-ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 1 tsp sugar
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a medium bowl, combine all the marinade ingredients: chicken, yogurt, lemon juice, ginger, garlic, turmeric, garam masala, cumin, and salt. Let it marinate for at least 15 minutes
  2. Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken in a single layer and cook for 3-4 minutes on each side until browned and cooked through. Remove from skillet
  3. In the same skillet, melt butter and add chopped onion. Cook until softened. Add garlic and ginger, cooking until fragrant
  4. Add coriander, sweet paprika, and cayenne pepper to the skillet, stirring constantly for about 30 seconds
  5. Pour in crushed tomatoes, sugar, and a pinch of salt. Bring to a simmer and cook for about 5-7 minutes until the sauce thickens
  6. Stir in heavy cream until the sauce is smooth. Return the cooked chicken to the skillet and simmer for an additional 2-3 minutes. Adjust seasoning with salt
  7. Garnish with cilantro and serve

Notes

For a dairy-free option, substitute yogurt with dairy-free yogurt and heavy cream with canned coconut cream.
