Description

These savory Roasted Cauliflower Steaks are a delicious and healthy addition to your dinner table, transforming a humble vegetable into something truly spectacular. Perfect for vegetarian meals or as a hearty side dish, they are easy to prepare and packed with flavor.


Ingredients

1 large head of cauliflower (about 22.5 lbs)
3 tablespoons Olive Oil
1 teaspoon Smoked Paprika
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/4 teaspoon Ground Cumi
1/4 teaspoon Turmeric Powder
Pinch of Cayenne Pepper (optional)
1 teaspoon Dried Oregano
1/2 teaspoon Salt (or to taste)
1/4 teaspoon Black Pepper (freshly ground)
Fresh Parsley or Cilantro (chopped, for garnish, optional)
Lemon Wedges (for serving, optional)


Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper
  2. Wash the cauliflower and remove the outer leaves. Slice the cauliflower into 3/4 to 1-inch thick 'steaks' through the core
  3. In a small bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, ground cumin, turmeric powder, cayenne pepper, dried oregano, salt, and black pepper. Mix well
  4. Arrange the cauliflower steaks on the baking sheet and coat both sides with the spice mixture
  5. Roast for 20-25 minutes, then flip each steak and roast for another 15-20 minutes until fork-tender and golden brow
  6. Garnish with fresh parsley or cilantro and serve with lemon wedges

Notes

For a spicy kick, add cayenne pepper to the spice mixture.

Don't waste the florets that break off; roast them alongside the steaks.
