Ingredients
1 large head of cauliflower (about 2–2.5 lbs)
3 tablespoons Olive Oil
1 teaspoon Smoked Paprika
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/4 teaspoon Ground Cumi
1/4 teaspoon Turmeric Powder
Pinch of Cayenne Pepper (optional)
1 teaspoon Dried Oregano
1/2 teaspoon Salt (or to taste)
1/4 teaspoon Black Pepper (freshly ground)
Fresh Parsley or Cilantro (chopped, for garnish, optional)
Lemon Wedges (for serving, optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper
- Wash the cauliflower and remove the outer leaves. Slice the cauliflower into 3/4 to 1-inch thick 'steaks' through the core
- In a small bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, ground cumin, turmeric powder, cayenne pepper, dried oregano, salt, and black pepper. Mix well
- Arrange the cauliflower steaks on the baking sheet and coat both sides with the spice mixture
- Roast for 20-25 minutes, then flip each steak and roast for another 15-20 minutes until fork-tender and golden brow
- Garnish with fresh parsley or cilantro and serve with lemon wedges
Notes
For a spicy kick, add cayenne pepper to the spice mixture.
Don't waste the florets that break off; roast them alongside the steaks.
