Description

Savory Spinach and Ricotta Rolls are a comforting meal that combines tender pasta sheets with a creamy filling of spinach and ricotta, all topped with a rich marinara sauce and melted cheese. This dish is perfect for busy weeknights and is loved by the entire family.

1 (15-ounce) container Whole Milk Ricotta Cheese
10 ounces Fresh Spinach, finely chopped
1 cup Shredded Mozzarella Cheese, plus extra for topping
½ cup Grated Parmesan Cheese
1 Large Egg
2 cloves Garlic, minced
¼ cup Fresh Parsley, chopped
½ teaspoon Salt
¼ teaspoon Black Pepper
12 No-Boil Lasagna Noodles
1 (24-ounce) jar Marinara Sauce
2 tablespoons Olive Oil


Instructions

  1. Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, chopped fresh spinach, 1 cup shredded mozzarella, Parmesan cheese, egg, minced garlic, chopped parsley, salt, and pepper. Mix until well incorporated
  2. Preheat Oven & Prep Dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil. Spread about ½ cup of marinara sauce evenly at the bottom of the dish
  3. Assemble the Rolls: Lay out each no-boil lasagna noodle on a clean surface. Spoon approximately ¼ cup of the filling over each noodle, spreading it almost to the edges
  4. Roll Them Up: Carefully roll each noodle tightly from one end to the other
  5. Arrange in Dish: Place the assembled rolls seam-side down in the prepared baking dish, snuggly next to each other
  6. Add Sauce and Cheese: Pour the remaining marinara sauce over the tops of the rolls and sprinkle the remaining mozzarella cheese on top
  7. Bake: Cover the dish loosely with aluminum foil and bake for 25 minutes
  8. Final Bake: Remove the foil and continue baking for another 10-15 minutes, until the cheese is melted and lightly golde
  9. Rest and Serve: Let the rolls rest for 5-10 minutes before serving

Notes

Drain spinach well to avoid excess moisture.

Use quality marinara sauce for best flavor.
