Description

These shrimp fajitas are quick, flavorful, and customizable, perfect for busy weeknight dinners. The combination of succulent shrimp and vibrant vegetables wrapped in warm tortillas is a family favorite.


Ingredients

1.5 pounds large shrimp, peeled and deveined
2 tablespoons olive oil, divided
1 large red bell pepper, thinly sliced
1 large green bell pepper, thinly sliced
1 large yellow bell pepper, thinly sliced
1 medium yellow onion, thinly sliced
2 teaspoons chili powder
1 teaspoon ground cumi
1 teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon cayenne pepper, optional
¾ teaspoon sea salt, or to taste
½ teaspoon black pepper, or to taste
1 lime, cut into wedges, for serving
810 small flour or corn tortillas


Instructions

  1. In a small bowl, combine the chili powder, ground cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), sea salt, and black pepper to create your fajita seasoning blend
  2. Pat the shrimp dry with paper towels. In a medium bowl, drizzle 1 tablespoon of olive oil over the shrimp, sprinkle with half of the seasoning mix, and toss to coat. Set aside
  3. Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the bell peppers and onion, sautéing for 5-7 minutes until tender-crisp and slightly charred
  4. Sprinkle the remaining seasoning over the cooked vegetables and continue to cook for another 1-2 minutes
  5. Push the vegetables to one side and add the shrimp to the other side of the skillet in a single layer. Cook for 1-2 minutes per side until the shrimp turn pink and opaque. Toss everything together to combine
  6. Warm the tortillas by wrapping them in foil and heating them in the oven, microwaving, or directly over a gas flame
  7. Squeeze lime wedges over the shrimp fajitas mixture and serve with the warm tortillas and toppings

Notes

Don't overcrowd the pan to ensure proper cooking of shrimp and vegetables.

Pat shrimp dry to get a good sear.
