Description

1 ½ pounds Boneless Skinless Chicken Thighs, trimmed
1 tablespoon Olive Oil
½ teaspoon Salt
¼ teaspoon Black Pepper
¼ cup Cornstarch
½ cup Mayonnaise
¼ cup Sweet Chili Sauce
1 tablespoon Sriracha
1 tablespoon Honey or Maple Syrup
1 teaspoon Rice Vinegar
½ teaspoon Garlic Powder
2 tablespoons Chopped Fresh Cilantro or Green Onions (optional)
Sesame Seeds for sprinkling (optional)


Instructions

  1. Pat the chicken thighs dry with paper towels, season with salt and pepper, and dredge in cornstarch
  2. Heat olive oil in a skillet over medium-high heat. Cook the chicken in batches for 5-7 minutes per side until golden brown and cooked through
  3. In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and garlic powder to make the bang bang sauce
  4. Return the cooked chicken to the skillet, pour the sauce over it, and toss to coat. Warm through for 1-2 minutes
  5. Transfer to serving plates, garnish with cilantro or green onions and sesame seeds, and serve hot

Notes

For a lighter sauce, substitute Greek yogurt for half of the mayonnaise.

You can customize the spice level by adjusting the amount of sriracha.
