Sloppy Joe Potato Skillet is a delicious one-pan meal that combines the classic flavors of sloppy joes with hearty potatoes, making it a quick, comforting dinner option for busy families.
Ingredients
2 tablespoons Olive Oil
1 pound Ground Beef (85/15 or 90/10 lean)
1 medium Yellow Onion, finely chopped
2 cloves Garlic, minced
1 teaspoon Chili Powder
1/2 teaspoon Smoked Paprika
1/4 teaspoon Black Pepper
1 (15 ounce) can Tomato Sauce
1/4 cup Ketchup
2 tablespoons Brown Sugar, packed
1 tablespoon Apple Cider Vinegar
1 tablespoon Worcestershire Sauce
1 teaspoon Dijon Mustard
1/2 cup Water or Beef Broth
1 1/2 pounds Russet or Yukon Gold Potatoes, peeled and diced into 1/2-inch cubes
1/2 cup Shredded Cheddar Cheese (optional, for topping)
2 tablespoons Fresh Parsley, chopped (for garnish, optional)
Instructions
- Prep the Potatoes: Peel and dice the potatoes into consistent 1/2-inch cubes and set aside
- Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, draining off excess grease
- Sauté Aromatics: Reduce heat to medium, add chopped onion and cook until softened. Stir in garlic, chili powder, smoked paprika, and black pepper, cooking for another minute
- Simmer the Sloppy Joe Sauce: Add tomato sauce, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard and water or beef broth. Bring to a simmer
- Add Potatoes and Cook: Add diced potatoes, ensuring they are submerged in the sauce. Cover and cook on low for 15-20 minutes until potatoes are tender
- Optional Cheese Topping: Remove lid, sprinkle cheddar cheese over the top, and either cover to melt or broil for 2-3 minutes until bubbly
- Serve: Let rest for a few minutes before serving and garnish with parsley if desired
