1 (15 ounce) can Tomato Sauce
1/4 cup Ketchup
2 tablespoons Brown Sugar, packed
1 tablespoon Apple Cider Vinegar
1 tablespoon Worcestershire Sauce
1 teaspoon Dijon Mustard
1/2 cup Water or Beef Broth
1 1/2 pounds Russet or Yukon Gold Potatoes, peeled and diced into 1/2-inch cubes
1/2 cup Shredded Cheddar Cheese (optional, for topping)
2 tablespoons Fresh Parsley, chopped (for garnish, optional)


Instructions

  1. Prep the Potatoes: Peel and dice the potatoes into consistent 1/2-inch cubes and set aside
  2. Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, draining off excess grease
  3. Sauté Aromatics: Reduce heat to medium, add chopped onion and cook until softened. Stir in garlic, chili powder, smoked paprika, and black pepper, cooking for another minute
  4. Simmer the Sloppy Joe Sauce: Add tomato sauce, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard and water or beef broth. Bring to a simmer
  5. Add Potatoes and Cook: Add diced potatoes, ensuring they are submerged in the sauce. Cover and cook on low for 15-20 minutes until potatoes are tender
  6. Optional Cheese Topping: Remove lid, sprinkle cheddar cheese over the top, and either cover to melt or broil for 2-3 minutes until bubbly
  7. Serve: Let rest for a few minutes before serving and garnish with parsley if desired
