Ingredients
2 tablespoons Olive Oil
1 pound Halal Chicken or Beef Sausage, cooked and sliced into ½-inch rounds
1 large Yellow Onion, diced
1 Red Bell Pepper, diced
1 Green Bell Pepper, diced
3 cloves Garlic, minced
2 tablespoons All-Purpose Flour
1 teaspoon Cajun or Creole Seasoning
½ teaspoon Smoked Paprika
¼ teaspoon Dried Thyme
1 Bay Leaf
1 ½ cups Chicken or Vegetable Broth
½ cup Heavy Cream
1 pound Large Shrimp, peeled and deveined
Salt and Freshly Ground Black Pepper to taste
¼ cup Fresh Parsley or Green Onions, chopped, for garnish
Instructions
- Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add sausage and cook until browned. Remove and set aside
- Reduce heat to medium, add remaining olive oil and sauté onion and bell peppers until tender
- Stir in garlic, spices, and cook for an additional minute
- Sprinkle flour over and cook for 1-2 minutes to make a roux
- Gradually add broth, whisking to prevent lumps, and simmer until sauce thickens
- Mix in heavy cream and sausage, simmer for a few minutes
- Add shrimp and cook until pink and opaque, about 3-5 minutes
- Remove bay leaf, season, and garnish before serving
