Ingredients

2 tablespoons Olive Oil
1 pound Halal Chicken or Beef Sausage, cooked and sliced into ½-inch rounds
1 large Yellow Onion, diced
1 Red Bell Pepper, diced
1 Green Bell Pepper, diced
3 cloves Garlic, minced
2 tablespoons All-Purpose Flour
1 teaspoon Cajun or Creole Seasoning
½ teaspoon Smoked Paprika
¼ teaspoon Dried Thyme
1 Bay Leaf
1 ½ cups Chicken or Vegetable Broth
½ cup Heavy Cream
1 pound Large Shrimp, peeled and deveined
Salt and Freshly Ground Black Pepper to taste
¼ cup Fresh Parsley or Green Onions, chopped, for garnish


Instructions

  1. Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add sausage and cook until browned. Remove and set aside
  2. Reduce heat to medium, add remaining olive oil and sauté onion and bell peppers until tender
  3. Stir in garlic, spices, and cook for an additional minute
  4. Sprinkle flour over and cook for 1-2 minutes to make a roux
  5. Gradually add broth, whisking to prevent lumps, and simmer until sauce thickens
  6. Mix in heavy cream and sausage, simmer for a few minutes
  7. Add shrimp and cook until pink and opaque, about 3-5 minutes
  8. Remove bay leaf, season, and garnish before serving
