¾ cup Granulated Sugar
1 teaspoon Baking Powder

1 large Egg, at room temperature
½ cup Full-Fat Milk, at room temperature
½ cup Neutral Oil (such as Canola or Vegetable Oil) or melted Unsalted Butter
1 cup Unfed Sourdough Discard, 100% hydration, at room temperature
1 teaspoon Pure Vanilla Extract
Zest of 1 large Lemo
2 tablespoons Fresh Lemon Juice
1 ½ cups Fresh or Frozen Blueberries (do not thaw if using frozen)


Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease and flour a 9×5-inch loaf pa
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt
  3. In a separate medium bowl, whisk together the egg, milk, oil (or melted butter), sourdough discard, vanilla extract, lemon zest, and fresh lemon juice until well combined
  4. Pour the wet ingredients into the dry ingredients and mix gently with a spatula until just combined; a few lumps are fine
  5. Gently fold in the blueberries
  6. Pour the batter into the prepared loaf pan, spread evenly, and sprinkle a little extra sugar on top if desired
  7. Bake for 55-65 minutes or until a wooden skewer inserted into the center comes out clean or with moist crumbs
  8. Once baked, cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely

Notes

Handle blueberries gently to prevent them from breaking apart.

Use fresh lemon zests and juice for the best flavor.
