Description

Southern Banana Pudding is a classic dessert that combines layers of creamy custard, ripe bananas, and vanilla wafers, creating a comforting treat that evokes nostalgia and warmth.


Ingredients

  • 6 ripe, but firm, medium bananas
  • 1 box (11 ounces / 312g) vanilla wafers (such as Nilla wafers)
  • 4 cups (960ml) whole milk
  • 1 cup (200g) granulated sugar
  • 1/2 cup (60g) all-purpose flour
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons pure vanilla extract
  • Optional: 1 cup (240ml) heavy cream, chilled, for topping (or store-bought whipped cream)
  • Optional: 2 tablespoons powdered sugar (for homemade whipped cream)

Instructions

  1. Prepare your 9×13-inch baking dish with a layer of vanilla wafers
  2. Slice the bananas and layer half of them over the wafers
  3. In a saucepan, whisk together the milk, sugar, flour, and salt until smooth
  4. Cook the mixture over medium heat, whisking until it thickens
  5. Temper the egg yolks by gradually adding hot milk mixture to them
  6. Combine the egg yolk mixture back into the saucepan and cook until thickened
  7. Remove from heat and stir in butter and vanilla
  8. Pour half of the custard over bananas and wafers
  9. Add another layer of vanilla wafers and the remaining banana slices
  10. Pour the rest of the custard over the top
  11. Chill in the refrigerator for at least 4 hours, preferably overnight
  12. Prepare optional whipped cream and serve over chilled pudding

Notes

Choose bananas that are ripe but firm.

Continuous whisking while cooking prevents lumps.

Chill time is crucial for the best texture.
