- 6 ripe, but firm, medium bananas
- 1 box (11 ounces / 312g) vanilla wafers (such as Nilla wafers)
- 4 cups (960ml) whole milk
- 1 cup (200g) granulated sugar
- 1/2 cup (60g) all-purpose flour
- 1/4 teaspoon salt
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 2 teaspoons pure vanilla extract
- Optional: 1 cup (240ml) heavy cream, chilled, for topping (or store-bought whipped cream)
- Optional: 2 tablespoons powdered sugar (for homemade whipped cream)
Instructions
- Prepare your 9×13-inch baking dish with a layer of vanilla wafers
- Slice the bananas and layer half of them over the wafers
- In a saucepan, whisk together the milk, sugar, flour, and salt until smooth
- Cook the mixture over medium heat, whisking until it thickens
- Temper the egg yolks by gradually adding hot milk mixture to them
- Combine the egg yolk mixture back into the saucepan and cook until thickened
- Remove from heat and stir in butter and vanilla
- Pour half of the custard over bananas and wafers
- Add another layer of vanilla wafers and the remaining banana slices
- Pour the rest of the custard over the top
- Chill in the refrigerator for at least 4 hours, preferably overnight
- Prepare optional whipped cream and serve over chilled pudding

Choose bananas that are ripe but firm.
Continuous whisking while cooking prevents lumps.
