½ cup All-Purpose Flour
¼ cup Granulated Sugar
1 tablespoon Baking Powder
½ teaspoon Baking Soda

1 ½ cups Buttermilk
2 large Eggs
¼ cup Unsalted Butter, melted


Instructions

  3. In another bowl, whisk buttermilk and eggs until combined
  4. Pour the wet ingredients into the dry ingredients and add melted butter
  5. Stir until just moistened, leaving a few lumps
  6. Evenly fill the muffin cups about 2/3 full
  7. Bake for 15-20 minutes until golden brown and a skewer comes out clea
  8. Cool in the tin for 5 minutes then transfer to a wire rack

For a gluten-free version, use a 1:1 gluten-free flour blend.

For extra flavor, consider adding cheese, jalapeños, or sweet corn.
