- Stir in the minced garlic and sauté for an additional minute until aromatic
- Add the diced sweet potatoes and spices (cumin, chili powder, smoked paprika, oregano, salt, pepper). Stir well and cook for 3-5 minutes
- Pour in the vegetable broth and diced tomatoes. Bring to a gentle simmer
- Stir in the uncooked rice and black beans, mixing thoroughly
- Reduce heat to low, cover, and let it simmer for 18-20 minutes
- Once cooked, remove from heat and let it sit covered for 5 minutes
- Fluff with a fork, garnish with cilantro, and serve with lime wedges
