Description

Steak Queso Rice is a one-pot meal that combines tender strips of seasoned steak, fluffy rice, and a creamy queso sauce, creating a vibrant dish that's easy to prepare and full of flavor.


Ingredients

1 pound Sirloin steak, thinly sliced against the grai
1 tablespoon Olive oil
1 teaspoon Chili powder
1 teaspoon Ground cumi
½ teaspoon Garlic powder
½ teaspoon Onion powder
½ teaspoon Salt, plus more to taste
¼ teaspoon Black pepper, plus more to taste
1 tablespoon Olive oil (for rice)
1 cup Long-grain white rice, rinsed
2 cups Low-sodium chicken broth
½ cup Water
2 tablespoons Unsalted butter
2 tablespoons All-purpose flour
1 ½ cups Milk (any percentage)
1 (4-ounce) can Mild diced green chilies, undrained
1 small Jalapeño, seeded and finely diced (optional)
2 cups Shredded Monterey Jack cheese
1 cup Shredded sharp cheddar cheese
¼ cup Fresh cilantro, chopped, plus more for garnish


Instructions

  1. In a medium bowl, toss the thinly sliced sirloin steak with 1 tablespoon olive oil, chili powder, cumin, garlic powder, onion powder, ½ teaspoon salt, and ¼ teaspoon black pepper
  2. Cook the seasoned steak in a hot skillet for 2-3 minutes per side until browned
  3. In the same skillet, sauté the rinsed rice in 1 tablespoon olive oil for 1-2 minutes, add chicken broth and water, bring to a boil, cover, and simmer for 15-18 minutes
  4. In a separate saucepan, melt butter and add flour to create a roux. Gradually whisk in milk and cook until thickened
  5. Stir in diced green chilies and jalapeño, then melt in Monterey Jack and cheddar cheese until smooth
  6. Fluff the rice and combine with steak and queso or serve separately, garnished with cilantro

Notes

For a spicier version, add extra jalapeños or hot sauce to the sauce.
