Ingredients
2 ½ pounds Russet potatoes
1 cup good quality mayonnaise
¼ cup apple cider vinegar
2 tablespoons Dijon mustard
1 tablespoon granulated sugar
1 teaspoon smoked paprika
½ teaspoon garlic powder
¼ teaspoon black pepper
½ cup finely chopped celery
¼ cup finely diced red onio
2 tablespoons fresh chives
2 tablespoons fresh parsley

Instructions
- Prepare the Potatoes: Peel and cut the Russet potatoes into 1-inch cubes. Rinse under cold water, place in a pot with cold water, add salt, bring to a boil, and cook until fork-tender (10-15 minutes)
- Cool the Potatoes: Drain and spread on a baking sheet to cool completely
- Prepare the Dressing: Whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, smoked paprika, garlic powder, and black pepper in a large bowl
- Combine Ingredients: Once the potatoes are cool, add them to the bowl with the dressing, along with celery, red onion, chives, and parsley
