Description

These Stuffed Mashed Potato Nests are golden, crispy potato cups filled with a savory, cheesy filling, perfect for using up leftovers and providing comfort at dinner time.


Ingredients

2 pounds Russet potatoes
1/2 cup whole milk
1/4 cup unsalted butter
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large egg yolk
1 tablespoon olive oil
1 small onio
2 cloves garlic
1 pound ground chicke
1 teaspoon dried Italian seasoning
1/2 cup tomato sauce
1/4 cup fresh parsley
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese


Instructions

  1. Prepare the Potatoes: Place the peeled and quartered potatoes into a large pot, cover with cold water and add salt. Bring to a boil, then simmer until fork-tender, about 15-20 minutes. Drai
  2. Mash the Potatoes: Return the drained potatoes to the pot. Add warmed milk, melted butter, salt, and black pepper. Mash until smooth. Stir in the egg yolk and set aside
  3. Make the Filling: Heat olive oil in a skillet, add diced onion and cook until softened. Stir in minced garlic and cook for another minute
  4. Brown the Meat: Add ground chicken to the skillet, cook until fully browned. Drain excess fat
  5. Season the Filling: Stir in Italian seasoning, tomato sauce, and parsley. Simmer for 5-7 minutes
  6. Assemble the Nests: Preheat oven to 400°F (200°C). Grease a muffin tin. Spoon mashed potatoes into each muffin cup and form into nests
  7. Fill and Bake: Spoon meat filling into each nest and top with mozzarella and Parmesan cheese
  8. Bake to Perfection: Bake for 20-25 minutes until golden brown and cheese is melted
  9. Serve: Remove from tin, garnish with parsley, and serve immediately

Notes

Make-ahead: Mash potatoes and prepare filling up to 2 days in advance.

Freezing instructions: Freeze after baking or assemble and freeze unbaked nests for later use.
