Description

Tasty Cheesy Crab Shrimp Tortilla Bombs are a quick and easy weeknight meal packed with flavor and comfort, perfect for busy families and gatherings.


Ingredients

1 tablespoon Olive Oil
1 small Yellow Onion, finely diced
2 cloves Garlic, minced
8 ounces Cooked Shrimp, peeled, deveined, and finely chopped
8 ounces Lump Crab Meat, drained and picked over for shells
8 ounces Cream Cheese, softened
1 cup Shredded Monterey Jack Cheese
1/2 cup Shredded Sharp Cheddar Cheese
1/4 cup Chopped Fresh Parsley
1 tablespoon Fresh Lemon Juice
1/2 teaspoon Smoked Paprika
1/4 teaspoon Black Pepper
Pinch of Red Pepper Flakes (optional)
12 (8-inch) Flour Tortillas
2 tablespoons Butter, melted


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add finely diced onion and cook until softened and translucent, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant. Remove from heat and set aside
  2. In a large mixing bowl, combine softened cream cheese, shredded Monterey Jack cheese, and shredded cheddar cheese. Add cooked shrimp, drained crab meat, cooled onion and garlic mixture, chopped parsley, fresh lemon juice, smoked paprika, black pepper, and optional red pepper flakes
  3. Mix all the ingredients until well combined. Ensure the cream cheese is fully incorporated and the seafood is evenly distributed
  4. Preheat oven to 400°F (200°C). Lightly grease a large baking sheet or line it with parchment paper
  5. Lay one flour tortilla flat and spoon about 1/4 to 1/3 cup of the filling onto the center
  6. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom. Place seam-side down on the prepared baking sheet. Repeat with remaining tortillas and filling
  7. Brush the tops and sides of each tortilla bomb with melted butter
  8. Bake for 18-22 minutes, until golden brown and crispy, and the filling is hot
  9. Remove from the oven and let cool for a few minutes before serving

Notes

Serve with a dipping sauce for extra flavor.
