Description
Tasty Mediterranean Spinach Feta Quesadillas are quick, delicious, and healthy, featuring fresh spinach, creamy feta, and crispy tortillas. Perfect for busy weeknights!
Ingredients
2 tablespoons Olive oil
1 small Red onion, finely chopped
2 cloves Garlic, minced
10 ounces Fresh spinach, roughly chopped
1/2 cup Crumbled feta cheese
1/4 cup Shredded mozzarella cheese
1/4 teaspoon Dried oregano
Pinch Red pepper flakes (optional)
Salt to taste
Freshly ground black pepper to taste
2 tablespoons Fresh parsley, chopped (optional)
Lemon wedges, for serving (optional)
8 (8-inch) Flour tortillas
Instructions
- Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Add the finely chopped red onion and sauté for 3-5 minutes until soft
- Add minced garlic and cook for another minute. Then, stir in fresh spinach and cook until wilted. Remove from heat
- Stir in feta, mozzarella, oregano, and red pepper flakes. Season with salt and black pepper to taste
- In the skillet, heat remaining olive oil. Place one tortilla and add 1/4 to 1/3 cup of the filling on one half
- Fold the tortilla and cook for 2-4 minutes per side until golden brown. Remove and repeat with remaining tortillas
- Slice quesadillas into wedges, garnish with parsley, and serve with lemon wedges
Notes
You can customize the filling by adding different greens or protein.
For a gluten-free option, use gluten-free tortillas.
