Description

Tasty Mediterranean Spinach Feta Quesadillas are quick, delicious, and healthy, featuring fresh spinach, creamy feta, and crispy tortillas. Perfect for busy weeknights!


Ingredients

2 tablespoons Olive oil
1 small Red onion, finely chopped
2 cloves Garlic, minced
10 ounces Fresh spinach, roughly chopped
1/2 cup Crumbled feta cheese
1/4 cup Shredded mozzarella cheese
1/4 teaspoon Dried oregano
Pinch Red pepper flakes (optional)
Salt to taste
Freshly ground black pepper to taste
2 tablespoons Fresh parsley, chopped (optional)
Lemon wedges, for serving (optional)
8 (8-inch) Flour tortillas


Instructions

  1. Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Add the finely chopped red onion and sauté for 3-5 minutes until soft
  2. Add minced garlic and cook for another minute. Then, stir in fresh spinach and cook until wilted. Remove from heat
  3. Stir in feta, mozzarella, oregano, and red pepper flakes. Season with salt and black pepper to taste
  4. In the skillet, heat remaining olive oil. Place one tortilla and add 1/4 to 1/3 cup of the filling on one half
  5. Fold the tortilla and cook for 2-4 minutes per side until golden brown. Remove and repeat with remaining tortillas
  6. Slice quesadillas into wedges, garnish with parsley, and serve with lemon wedges

Notes

You can customize the filling by adding different greens or protein.

For a gluten-free option, use gluten-free tortillas.
