Description

These Tasty Teriyaki Chicken Skewers are a flavorful and family-friendly dish featuring marinated chicken, colorful vegetables, and juicy pineapple, perfect for busy weeknights or summer barbecues.


Ingredients

1.5 pounds Boneless, skinless chicken breasts, cut into 1-inch cubes
1 large Red bell pepper, cored, seeded, and cut into 1-inch pieces
1 large Green bell pepper, cored, seeded, and cut into 1-inch pieces
1 cup Fresh pineapple chunks (canned also works, drained)
1215 Wooden or metal skewers (if using wooden, soak in water for at least 30 minutes)
2 tablespoons Sesame seeds, for garnish (optional)
Fresh cilantro, chopped, for garnish (optional)
1/2 cup Soy sauce (use a low-sodium version if preferred)
1/4 cup Honey (or brown sugar)
2 tablespoons Rice vinegar
1 tablespoon Sesame oil
2 cloves Garlic, minced
1 tablespoon Fresh ginger, grated
1/4 teaspoon Black pepper
1 tablespoon Cornstarch (mixed with 2 tablespoons cold water for thickening, if desired for a glaze)


Instructions

  1. Prepare the marinade: In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and black pepper
  2. Marinate the chicken: Add the cubed chicken breasts to the marinade, ensuring all pieces are well coated. Refrigerate for at least 30 minutes
  3. Prepare vegetables and fruit: Cut your red bell pepper, green bell pepper, and pineapple into roughly 1-inch pieces
  4. Thread the skewers: Remove chicken from marinade, reserving the remaining marinade. Thread chicken, bell peppers, and pineapple alternately onto skewers
  5. Cook the skewers: Grill skewers at medium-high heat for 10-15 minutes, turning frequently until the chicken is cooked through and has char marks
  6. Glaze with sauce (optional): Bring reserved marinade to a boil, then reduce and simmer until thickened. Brush this onto skewers during the last few minutes of cooking
  7. Serve: Garnish with sesame seeds and fresh cilantro, serve immediately

Notes

Pre-soak wooden skewers to prevent burning for at least 30 minutes.
