Description

This Turkey Chili Taco Soup is a hearty, flavorful dish that combines the robust warmth of chili with the vibrant, zesty punch of taco soup, perfect for busy weeknights.


Ingredients

1 tablespoon Olive Oil
1 pound Lean Ground Turkey
1 large Onion, chopped
2 cloves Garlic, minced
1 (15-ounce) can Black Beans, rinsed and drained
1 (15-ounce) can Kidney Beans, rinsed and drained
1 (15-ounce) can Corn, drained (or 1 ½ cups Frozen Corn)
1 (28-ounce) can Crushed Tomatoes
1 (10-ounce) can Rotel Diced Tomatoes with Green Chilies, undrained
1 (4-ounce) can Diced Green Chilies, undrained
4 cups Chicken Broth (low sodium)
1 (1-ounce) packet Taco Seasoning Mix
2 tablespoons Chili Powder
1 teaspoon Ground Cumi
½ teaspoon Smoked Paprika
Salt and Freshly Ground Black Pepper to taste
Optional toppings: Shredded Cheese, Sour Cream, Fresh Cilantro, Diced Avocado, Tortilla Chips or Strips, Lime Wedges


Instructions

  1. Heat the Olive Oil in a large pot or Dutch oven over medium-high heat. Add the Ground Turkey and cook until fully browned
  2. Add the chopped Onion and cook for 5-7 minutes until soft. Stir in the minced Garlic for another minute
  3. Pour in the rinsed and drained Black Beans, Kidney Beans, and Corn. Add the Crushed Tomatoes, Rotel, and Diced Green Chilies
  4. Stir in the Chicken Broth, Taco Seasoning Mix, Chili Powder, Ground Cumin, and Smoked Paprika. Mix well
  5. Bring to a gentle boil, then reduce heat to low, cover, and let simmer for 20-30 minutes
  6. Taste and adjust seasoning with Salt and Black Pepper
  7. Serve warm topped with your favorite garnishes

Notes

For a different protein, consider using ground chicken or beef.

For a vegetarian version, omit turkey and add extra beans or vegetables.
