1 cup Unsalted Butter
1 ½ cups Granulated Sugar
2 large Eggs
1 tablespoon Vanilla Extract
2 ounces Red Food Coloring
½ cup Buttermilk
8 ounces Full-Fat Cream Cheese
½ cup Unsalted Butter
4 cups Powdered Sugar
1 teaspoon Vanilla Extract
12 tablespoons Milk


Instructions

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cocoa powder. Set aside
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy
  4. Beat in the eggs one at a time, then stir in the vanilla extract and red food coloring
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie
  7. Bake for 8-10 minutes, or until edges are set
  8. Let cool on the baking sheet for 5 minutes before transferring to a wire rack
  9. To make the frosting, beat cream cheese and butter until smooth, then add powdered sugar and vanilla extract. Adjust consistency with milk if necessary
  10. Once cookies are completely cool, frost generously
